A few things:

1) the EGT probes wear out, don't count on much more than 1000 hours.
2) the probes have a little nut screw and washer - open up the sleeve, check that the washer is between the two terminals and that it is tight.
3) the JPI use a pretty inexpensive connector with crimped tab type pins. Try reseating the connector on the back of the EDM700, failing that, check that all the pins are properly seated in the connector. I have seen a pin push out of the connector.

I am also having an issue with my JPI 700. The #5 cylinder "bar" indicators are not displayed, despite the digital temp readouts and I keep getting indications saying EGT high despite the engine being started up from cold.

The probes, I sold my 180, replaced a probe and all good
In my new plane, brand new JPI830, first EGT probe went at 50 hrs.
Just replace a probe, it’s inexpensive

Yup, did that already on the #5. Maybe its the joints of the pins inside connectors, or maybe a poor ground?

Jason, the probe that failed had a slightly too sharp bend in the lead going to the probe right at the probe,
They are very sensitive sensors,
The solder joints and all connections should also be checked, check your Complete harness for all the probes for integrity.
Un do all the little zip ties, straighten and neaten, and re secure.
I am sure that will solve it
