Is there a way of blocking particular forums so messages are not included in a "View New Posts" selection?
I am not interested in modeling, for example, so can I exclude those forums somehow?

Go to your user control panel.
Select Usergroups tab
Select the General Aviator radio button
Submit at bottom
This should remove the model fora altogether for you.
